Ingredients (for 2):
- 1 tbsp olive oil
- 1 small chicken breast, diced
- 1 small onion, chopped
- 1 carrot, sliced
- 2 cups chicken broth
- ½ cup noodles or rice
- 2 tbsp cream or milk
- Salt, pepper, parsley
Method:
- Heat oil, brown chicken for 3 minutes.
- Add onion and carrot, sauté 2 minutes.
- Pour in broth and noodles, simmer 12–15 minutes until noodles are soft.
- Stir in cream, season with salt and pepper, and sprinkle parsley before serving.
