Creamy Chicken Soup (One Pan, 20 Minutes)

Ingredients (for 2):

  • 1 tbsp olive oil
  • 1 small chicken breast, diced
  • 1 small onion, chopped
  • 1 carrot, sliced
  • 2 cups chicken broth
  • ½ cup noodles or rice
  • 2 tbsp cream or milk
  • Salt, pepper, parsley

Method:

  1. Heat oil, brown chicken for 3 minutes.
  2. Add onion and carrot, sauté 2 minutes.
  3. Pour in broth and noodles, simmer 12–15 minutes until noodles are soft.
  4. Stir in cream, season with salt and pepper, and sprinkle parsley before serving.
