Ingredients (for 2):
- 1 tbsp olive oil
- 1 small onion, chopped
- 1 carrot, thinly sliced
- 1 cup chopped zucchini
- 1 cup frozen peas
- 2 cups vegetable broth
- 1 tsp dried thyme, salt & pepper
Method:
- Heat oil in a pan, sauté onion and carrot for 3 minutes.
- Add zucchini and peas, stir 2 minutes.
- Pour in broth and thyme, simmer 12 minutes until veggies are tender.
- Season and serve warm with bread.
