Hearty Vegetable Soup (One Pan, 18 Minutes)

Ingredients (for 2):

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 1 carrot, thinly sliced
  • 1 cup chopped zucchini
  • 1 cup frozen peas
  • 2 cups vegetable broth
  • 1 tsp dried thyme, salt & pepper

Method:

  1. Heat oil in a pan, sauté onion and carrot for 3 minutes.
  2. Add zucchini and peas, stir 2 minutes.
  3. Pour in broth and thyme, simmer 12 minutes until veggies are tender.
  4. Season and serve warm with bread.
