Ingredients (for 2):
•1 tbsp olive oil
•½ cup red lentils
•1 small tomato, chopped
•1 small carrot, diced
•1 cup vegetable broth
•½ tsp cumin
•½ tsp paprika
•Pinch of salt
Method:
1.Heat oil, sauté carrot and tomato for 2 minutes.
2.Add lentils, spices, and broth.
3.Simmer 15 minutes (covered) until lentils are soft.
4.Stir, taste, and drizzle a bit of olive oil before serving.
