🥄 Ingredients
- 1 cup couscous
- 1 ¼ cups boiling water or vegetable broth
- ½ zucchini, diced
- ½ red bell pepper, diced
- ½ small onion, chopped
- 1 small carrot, sliced thin
- 2 tbsp olive oil
- Juice of ½ lemon
- 1 tsp dried oregano or thyme
- Salt & pepper to taste
- Fresh parsley to finish
🔥 Instructions
- Preheat a pan with a drizzle of olive oil. Add zucchini, pepper, onion, and carrot.
Sauté 5–6 minutes until golden and soft. - In a bowl, pour boiling water or broth over couscous. Cover and let rest 5 minutes.
- Fluff the couscous with a fork, add the roasted vegetables, lemon juice, oregano, salt, and pepper.
- Toss gently, drizzle a little olive oil, and sprinkle with parsley.
