  • 1 ¼ cups boiling water or vegetable broth
  • ½ zucchini, diced
  • ½ red bell pepper, diced
  • ½ small onion, chopped
  • 1 small carrot, sliced thin
  • 2 tbsp olive oil
  • Juice of ½ lemon
  • 1 tsp dried oregano or thyme
  • Salt & pepper to taste
  • Fresh parsley to finish
