🇬🇷 Moussaka (Quick Pan Style)

🌿 Ingredients (2 servings)

  • 1 small eggplant, sliced
  • ½ onion, chopped
  • 200 g ground beef or plant-based mince
  • 1 tomato, diced
  • 1 tbsp tomato paste
  • 1 tbsp olive oil
  • Salt, pepper, and a pinch of cinnamon
  • 2 tbsp milk or soy milk
  • 1 tbsp flour
  • 1 tbsp butter or olive oil (for quick sauce)

🥄 Directions

1️⃣ Heat olive oil in a large pan, add eggplant slices, cook until golden, then set aside.

2️⃣ In the same pan, add onion and mince, cook 5–6 minutes.

3️⃣ Stir in tomato, tomato paste, salt, pepper, and cinnamon; simmer 5 minutes.

4️⃣ In a small cup, whisk milk, flour, and butter — pour into the pan to thicken slightly.

5️⃣ Add eggplant back on top, cover, and simmer 5 more minutes.

Serve warm with bread or rice — a cozy, creamy Greek favorite in just one pan 🌿
