🌿 Ingredients (2 servings)

  • 3 eggs
  • 1 small potato, thinly sliced
  • ½ onion, finely chopped
  • ½ red pepper, diced
  • 2 tbsp olive oil
  • Salt & pepper to taste

🥄 Directions

1️⃣ Heat olive oil in a non-stick pan.

2️⃣ Add sliced potato and onion; cook 5–6 minutes until soft and golden.

3️⃣ Add red pepper and cook 2 more minutes.

4️⃣ Beat eggs with salt and pepper, then pour over vegetables.

5️⃣ Cook on low heat 6–7 minutes, until the bottom sets.

6️⃣ Flip gently or cover until the top firms.

Serve warm or room temperature — a perfect lazy brunch or dinner 🌿
