🌿 Ingredients (2 servings)
- 1 small eggplant, diced
- 1 zucchini, diced
- ½ red pepper, chopped
- 1 tomato, chopped
- 2 tbsp olive oil
- 1 tsp dried herbs (thyme, basil, or herbes de Provence)
- Salt & pepper to taste
🥄 Directions
1️⃣ Heat olive oil in a deep pan. Add eggplant and cook 5 minutes until soft.
2️⃣ Add zucchini and red pepper; stir another 5 minutes.
3️⃣ Add tomato, herbs, salt, and pepper.
4️⃣ Let everything simmer on low heat for 8 minutes until the vegetables are soft and fragrant.
